What would your favorite chocolate chip be like? Chewy and lots of chocolate chips? This recipe uses millet flour. Millet flour's flavor profile is kind of buttery, nutty, grassy, and has a slightly bitter after taste. It is high in protein, fiber, iron, phosphorous, manganese, magnesium, and copper. Just one note. If you have hypothyroidism, it is best to stay away from millet flour as this may exacerbate your condition. You may substitute Millet flour with Oat flour, Brown Rice flour, or Gluten-Free flour.

  1. Preheat oven to 350 degrees F.
  2. Mix all dry ingredients - Millet flour, Almond flour, baking soda, salt. Set aside
  3. In a separate bowl, mix coconut oil and coconut sugar. Add in egg and vanilla. Mix well until combined.
  4. Add in dry ingredients
  5. Add in chocolate chips
  6. Using ice cream scoop, scoop dough into a prepared baking tray with silicon mat or parchment paper on. Flatten the dough using a spoon or slightly greased fingers.
  7. Bake for 10 mins
